Bruschetta

Ingredients

  • 1 Can artichoke hearts, drained
  • 2 Roma tomatoes
  • 3 green onions, chopped
  • 1/4 C kalamata or black olives
  • 1 1/2 C shredded mozarella
  • 1/2 C grated Parmesan or Romano
  • 5 TBL Mayonnaise
  • 2-3 TBL fresh basil
  • 1/4 tsp crushed red pepper
  • 1 24" long baguette, cut into 1/2" thick slices

Preparation

Step 1

Coarsely chop artichokes and tomatoes. Add onion, olives, cheese, mayo, basil and red pepper. Cover and chill 24 hours.
Heat broiler.
Spread baguette slices on baking sheet. Put a tsp of mixture on each. Put under broiler until hot and bubbly.
