Ranch chicken

Ingredients

  • 2-6 skinless chicken breasts
  • 1 large onion
  • 1/2 green pepper
  • 1/2 cup celery
  • 1 can Italian style tomato sauce (soup can size)
  • 1/2 cup water
  • 1 can mushrooms and liquid
  • 1 tsp. chopped parsley
  • Grated cheese

Preparation

Step 1

Brown skinless chicken breasts in small amount of olive oil. Remove from pan. Chop and saute the onion, green pepper and celery and saute in the same oil. Add the rest of ingredients and salt and pepper to taste. When bubbly, add the browned chicken breasts. Cover and simmer at low heat for 1 hour. Ten minutes before cooking time is completed, sprinkle grated cheese liberally over top.
