FETTUCINE ALFREDO

Ingredients

  • s3/4 lb uncooked fettuccine
  • Boiling salted water
  • 6 tbsp unsalted butter
  • 2/3 cup whipping cream
  • Pinch nutmeg
  • 1/2 tsp salt
  • Pinch white pepper
  • 1 cup fresh grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Preparation

Step 1

Cook fettuccine 6-8 minutes, drain and return to pot. White cooking fettuccine, place butter and cream in 10" skillet over medium-low heat. Cook, stirring constantly until mixture bubbles for 2 minutes. Stir in salt, pepper and nutmeg. Remove from heat, stir in Parmesan cheese and blend. Return briefly to heat, if necessary to blend cheese - but do not let sauce bubble. Pour sauce over noodles. Place over low heat and toss for 2-3 minutes. Sprinkle with parsley and serve.
