Easy Shrimp Bisque

Ingredients

  • 6-8 Medium Shrimp, chopped
  • Salt and Pepper
  • 2-3 Tablespoons Butter
  • 2 Tablespoons Brandy
  • 2 14.5-ounce Cans Tomato Soup
  • 1 Cup Heavy Cream
  • Chives, chopped

Preparation

Step 1

Chop the shrimp and season with salt and pepper. In a medium saucepan, cook in butter over medium heat until opaque, 3 to 4 minutes; remove. Add brandy to the pan, then tomato soup cans and heavy cream; simmer for 5 minutes. Place shrimp in soup bowls and add soup mixture to serving bowl. Sprinkle with chopped chives.
