Potatoes - Cheesey Potatoes (w/ velveeta and bacon)

Ingredients

  • 4 medium potatoes, unpeeled, quartered and cut into 1/2" chunks (about 4 cups)
  • 1/2 lb. Velveeta, cubed
  • 1/2 medium onion, chopped (about 1/2 cup)
  • 1/4 cup mayonnaise
  • 4 slices bacon, cooked, drained and crumbled (about 1/4 cup)

Preparation

Step 1

Preheat oven to 400 degrees. Coat an 8" square baking dish with cooking spray.

Place potatoes, Velveeta, onion and mayonnaise in th3e baking dish and stir to combine. Sprinkle with bacon.

Bake for 40-45 minutes, or until potatoes are tender.
