Ingredients
- 2/3 cup flour
- 2 tbsp sugar
- 2 tbsp walnuts
- 3 tbsp butter, chilled & cut into bits
- 1-2 tbsp ice water
- 3 pints fresh strawberries, sliced
- 1/4 cup Grand Marnier
- 1/2 cup apricot jam
- 1/2 pint whipping cream, whipped
Preparation
Step 1
Place flour, sugar and nuts in bowl of food processor. Mix, using 1 or 2 on/off motions. Gradually drop chilled butter through feed tube and process using on/off pulses until mixture is texture of coarse meal, for about 15 seconds. Add 1-2 tbsp ice water and process just until ball forms. Refrigerate dough for 30 minutes. Roll dough out to fit 9" pie plate. Prick dough with a fork. Place in 350F oven and bake until golden for 15-20 minutes. Cool.
Place 1/2 berries in Grand Marnier to soak. Puree other half - cook with jam in non-aluminum saucepan until reduced by half. Cool. Pour into pie crust. Arrange whole berries on top. Refrigerate for 1 to 2 hours. Top with whipped cream.
