Ingredients
- 1 large pork butt - with bone in (sometimes called Boston Shoulder)
- 4 to 5 cloves of garlic
- garlic salt
- 6 to 8 cucumbers, peeled and sliced
- Salt
- 1/2 cup soy sauce
- 1/4 cup white wine vinegar
- 1 tbs mirin (in chinese food aisle)
- 2-3 cloves garlic minced
- Chili pepper powder - to taste
- Japanese somen noodles
Preparation
Step 1
Rub pork with garlic salt. Brown pork in pan with a little oil. Add water to cover and whole garlic cloves. Simmer till pork falls off the bone (several hours). Remove pork from broth. When cooled shred and season with salt and pepper and return to broth.
Cucumbers
In a large bowl salt cucumbers (heavily) - let sit all day then drain water (leave a little bit in). Add soy sauce vinegar, mirin, minced garlic and chili pepper. (will be salty but this is what will flavor the broth.
Japanese somen noodles
Cook noodles in boiling water. Drain and set aside.
To serve: Ladle some pork and broth into bowl. Add a portion of cucumbers to broth and then add some noodles.
