Peanut Butter Toffee Bars

Ingredients

  • 2 cups quick cooking oats
  • 2 cups flour
  • 1 cup firmly packed brown sugar
  • 1/2 cup chopped roasted peanuts
  • 3/4 tsp baking soda
  • 1 1/4 cup butter, softened
  • 1 (8oz) package cream cheese, softened
  • 3/4 cup crunchy peanut butter
  • 1/3 cup sugar
  • 1 large egg
  • 1 cup toffee bits

Preparation

Step 1

1. Preheat the oven to 350F. Line a 13x9" baking pan with aluminum foil and spray with nonstick cooking spray.

2. In a large bowl, combine the oats, flour, brown sugar, peanuts and baking soda. Using a pastry blender, cut in the butter until the mixture is crumbly. Press half of the oat mixture firmly into the bottom of the prepared pan. Bake for 20 mins.

3. In a medium bowl, beat the cream cheese, peanut butter, sugar and egg at medium speed with a mixer until combined. Spoon the mixture over the prepared crust, spreading to the edges. Sprinkle evenly with the toffee bits, then with the remaining half of the oat mixture. Bake for 20-25 mins or until golden brown. Let cool completely before cutting and serving.
