Ingredients

  • BBQ CHICKEN
  • 1 store bought rotisserie chicken, skinned and pulled meat
  • 1 onion, chopped
  • 3 - 4 cloves garlic, chopped
  • Salt and Pepper
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 3 Tbsp. paprika
  • 1/4 c. cider vinegar
  • 2 tbsp. light brown sugar
  • 2 tbsp. Worcestershire
  • 1 c. chicken broth
  • 1 14 oz. can tomato sauce
  • SALAD
  • 1 seedless cucumber, thinly sliced
  • salt
  • 1 tsp. sugar
  • 1/2 c. sour cream
  • 1 tbsp. white wine vinegar
  • 2 tbsp. chopped dill
  • 2 tbsp. finely chopped chives
  • ROLLS
  • Store-bought, sliced bread and butter pickles
  • Potato or other soft sandwich rolls, toasted

Step 1

Heat a skillet over medium to medium high heat and add onion and garlic. Soften then season with salt, pepper, and spices. Add vinegar, sugar, Worcestershire, stock, and tomato sauce. Stir to combine. Add pulled chicken meat and let simmer a few minutes for flavors to combine and to thicken sauce.

Place cucumbers in a strainer and season liberally with salt. Let drain 20 minutes and press out any excess water. In a small bowl combine sour cream with sugar, vinegar, dill, and chives. Add cucumber and toss to coat.

On the roll bottoms place a couple of pickles, some BBQ, some cucumber salad, cover with roll top.
