Ingredients
- 1 3/4 cups crushed chocolate water cookies
- 1/2 cup unsalted butter, room temperature
- 1/4 cup thawed frozen lemonade
- 3 tbsp Tequila
- 1 tbsp Triple Sec
- 4 tsp fresh lime juice
- 2 tsp grated lime peel
- 3 drops green food coloring
- 5 cups vanilla ice cream, softened
- Whipped cream
- 1 lime, thinly sliced for garnish
Preparation
Step 1
Preheat oven to 350F. Blend cookie crumbs and butter in small bowl. Press mixture onto bottom and up sides of 9" pie pan. Bake for 12 minutes. Cool crust completely on rack.
Mix lemonade, Tequila, Triple Sec, lime juice, lime peel and food coloring in large bowl. Add ice cream and mix well. Do not let melt. Spoon mixture into prepared pie crust. Cover with plastic and freeze overnight. Can be prepared 2 days ahead.
Cut into wedges. Transfer to plates and top each with dollop whipped cream and a lime slice.
