Mini Spinach Calzones

This recipe is great as an appetizer or even dinner. You can make these ahead of time and freeze and pull out when you need them. One of my favorite features is being able to cook frozen in the NuWave.

Ingredients

  • 25 Servings if Pizza dough used
  • Try substituting Pizza dough for Pillsbury crescent rolls
  • Nonstick cooking spray
  • 1/2 of a 10 ounce package of frozen spinach, thawed and well-drained
  • 1/2 of an 8 ounce package reduced-fat cream cheese (Neufchatel), softened
  • 2 Tablespoons Grated parmesan cheese
  • 2 Tablespoons chopped green onion
  • 1/4 teaspoon Ground black pepper
  • 1 13.8 ounce package refrigerated pizza dough
  • 1 egg white
  • 1 Tablespoon water
  • 1 Tablespoon parmesan cheese grated

Preparation

Step 1

1. Spray 4 inch rack with non stick spray.

2. In a medium bowl, stir together spinach, cream cheese, 2 Tablespoons of parmesan cheese, green onion, and pepper. Set aside.

3. Unroll pizza dough on a lightly floured surface; roll dough into a 15 inch square. Using a pizza cutter or sharp knife, cut into 25, 3 inch squares.

4. Spoon a slightly rounded teaspoon of spinach filling onto the center of each square.

5. In a small bowl, whisk together the egg white and water. Lift a corner of each square, and stretch dough over to opposite corner, making a triangle. Press edges together with a fork.

6. Arrange the calzones on prepared 4 inch rack. Prick tops of calzones with fork. Brush tops of calzones with egg white mixture.

7. Cook on power level high for 10 minutes or until browned.

Tips
When cooking from frozen cook 13-15 minutes or until browned and cooked in middle.
