Ingredients
- For the Salad:
- 1 19 oz can Black beans, rinsed and drained
- 1/2 a red pepper, diced
- 1 avocado, cubed
- For the Dressing:
- 1/4 cup cilantro, minced
- juice and zest of 1 lime
- 1 Tbsp white balsamic vinegar
- 1/4 tsp ground cumin
- 1 tsp honey
- 3 Tbsp olive oil
- Black pepper
Preparation
Step 1
For the Dressing: In a small bowl, combine all ingredients. Whisk to emulsify. Set aside.
For the Salad:
1 19 oz can Black beans, rinsed and drained
1/2 a red pepper, diced
1 avocado, cubed
Add all ingredients to medium sized bowl, toss with dressing and serve.
