Ingredients

  • 3 Tbsp lime juice
  • 1/2 tsp chili powder
  • 6 Tbsp rice wine vinegar
  • 1 tsp sugar or 2 Tbsp honey
  • 6 Tbsp extra-virgin olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup minced cilantro leaves
  • 1 large jicama, peeled and finely shredded
  • 1 red bell pepper, sliced very thin
  • 1/2 red cabbage, sliced very thin
  • 1/2 red onion, sliced very thin
  • 1 cup peeled, julienned carrots

Preparation

Step 1

1. In a small mixing bowl add lime juice, chili powder, vinegar, sugar or honey, olive oil, salt and pepper. Whisk to combine.

2. Combine the jicama, bell pepper, cabbage, onion and carrots in a large bowl and toss.

3. Add dressingand mix, add cilantro, mix and let sit for 15 min.then mix and serve
