Roasted Chicken Thighs w/Zucchini and Feta

Ingredients

  • 2.5 lbs skinless chicken thighs, rinsed and patted dry
  • 2 medium zucchini, cut into 1" chunks
  • 2 Tbls extra-virgin olive oil
  • 2 garlic cloves, minced
  • 2 tsps dried oregano
  • 3/4 tsp salt
  • 1/2 tsp freshly ground black pepper
  • Finely grated zest of 1 lemon
  • 1/2 cup crumbled feta cheese

Preparation

Step 1

1. Preheat oven to 425F. In a baking pan, toss together all ingredients except feta cheese. Bake for 20 minutes.

2. Raise oven temperature to 475F. Sprinkle the feta over the chicken and zucchini and continue to bake until the chicken is cooked through and lightly golden, about 10 minutes longer. Let stand 5 minutes before serving.
