Meatballs stuffed with Mozzarella

These meatballs are slow cooked... so easy and so good!! They are great for meatball hoagies or spaghetti and meatball dinners.

Ingredients
- 3/4 # ground beef
- 3/4 # ground pork
- 1 C seasoned breadcrumbs
- 1/2 C parmesan
- 4 mozzarella cheese sticks, each cut into 6-8 small pieces
- 2 cloves garlic, minced
- 1 egg
- 1 egg yolk
- 3/4 teas Italian seasoning
- 1 teas onion powder
- salt & pepper to taste
- marinara sauce, homemade or store bought (enough to cook with the meatballs and extra for meatball hoagie.
Preparation
Step 1
In a large bowl, combine ground beef & pork with breadcrumbs, parmesan, egg & egg yolk, Italian seasoning, onion powder, garlic & salt & pepper.
Use your hands to mix everything together until combined.
Take a small handful of meat (2-3 Tbls) and roll it into a ball. Flatten the ball and place 1 cube of mozzarella cheese in the center.
Form meat into a round ball around the cheese, then repeat with remaining meat and cheese cubes.
Place all cheese-stuffed meatballs in the slow cooker, add marinara then cover and cook on HIGH for about 2 hours or LOW for about 3-4 hours or until the meatballs are cooked all the way through.
