White Cheddar and Chive Omelet*

Ingredients

  • 6 eggs
  • chopped fresh chives
  • salt and papper
  • 1 Tbs. butter
  • 1/2 cup extra sharp white cheddar cheese, shredded

Preparation

Step 1

Mix all ingredients together, except cheese. Melt butter in skillet, and add mixture. Cook a few minutes until almost set, lifting the sides of the omelet to let the uncooked egg flow under. Sprinkle the top with the cheese and cook until it softens. Fold one side of the omelet over the center, then the other side over the center. Serve.
