No Bake Chocolate Coconut Snowballs

  • 1 3/4 cups unsweetened shredded coconut
  • 3 tsp coconut oil
  • 3 tbls maple syrup
  • 2 tbls unsweetened coconut milk
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt
  • organic dark chocolate


Servings 15


Step 1

1. Melt coconut oil slightly in microwave and place in mixing bowl
2. Add shredded coconut, maple syrup, coconut milk, vanilla extract ans salt
3. Mix well
4. Shape into 1" balls
5. Refrigerate for 1 hour
6. Melt chocolate and roll coconut balls to coat with chocolate
7. Keep in the refrigerator

Can also omit chocolate and roll balls just in coconut
