Granita De Lemone (Lemon Ice)
- 3 cups Water
- 1 cup Sugar
- 5 Lemons, juiced
- 1/2 cup Limoncello or Lemon liqueur
- 1 tbsp grated Lemon zest
- Mint leaves for garnish
Scrape out lemons after juicing; Freeze rinds for serving later.
Mix water and sugar in a saucepan; bring to a boil over high heat. Boil uncovered, stirring occasionally until sugar dissolves.
Remove from heat; stir in lemon juice, limoncello, and lemon zest.
Pour into baking pan. Freeze for 1 hour; stir.
Cover and feeeze for at least 2 hours or longer.
To serve: Scrape and scoop into frozen lemon rinds and top with mint.
