Ingredients

  • BARBECUE SAUCE:
  • 3 lbs ground beef
  • 2 c quick oats, uncooked
  • 1 (13oz) can evaporated milk
  • 1 c chopped onion or 3 TBSP minced onion, reconstituted
  • 2 eggs, slightly beaten
  • 2 tsp chili powder
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 2 c ketchup
  • 1 1/2 c brown sugar
  • 2 TBSP liquid smoke
  • 1/2 tsp garlic powder
  • 1/2 c chopped onion or 1 TBSP minced onion, reconstited
  • 1/4 c parsley

Preparation

Step 1

Lightly, but thotoughly mix ground beef, oats, evaporated milk, onion, eggs, chili powder, salt, pepper, and garlic powder.

Shape into 1 1/2 inch balls and place in a single layer in two 13 x 9 baking pans. Combine ketchup, brown sugar, liquid smoke, and garlic powder. Stir in onion and pour over meatballs. Bake 350 degrees for 1 hour. Place meatballs on a serving platter and garnish with parsley.

Alternate method of preparation:
After forming meatballs, placde on a rack in a shallow baking pan in single layer. Bake for 15 minutes in a 400 degree oven. Place prepared barbecue sauce in a crockpot and carefully place meatballs in sauce to coat them with sauce. Cover pot and cook on low setting 6-8 hrs.

Remove from crockpot and place in a 3 quart casserole dish. Keep warm until potluck time.

This makes 36 regular sized or 100 cocktail sized meatballs.
