Ingredients

    cup flour

  • 1

    tbsp. cocoa

  • 1 1/2

    tsp. baking soda

  • 1/2

    tsp. salt

  • 1/2

    cup plus 1/4 cup butter, softened

  • 1/4

    cup shortening, softened

  • 1

    cup sugar

  • 1

    egg

  • 2

    tsp. vanilla, divided

  • 1

    tbsp. red food coloring

  • 1/4

    cup buttermilk

  • 4

    oz. cream cheese

  • 2

    cups powdered sugar

Directions

Preheat oven to 350. Line baking sheets with parchment paper. Whisk flour the salt to combine. In large bowl beat with electric mixer 1/2 cup butter, shortening and sugar until light and fluffy. Add egg, 1 tsp. vanilla and food coloring - mix until combined. Alternate adding flour and buttermilk until combined. Scoop batter with spoon and place on baking sheet 2" apart. Should have 32 cookies, to make 16 whoopee pies. Bake 10-12 min. until cakes are puffed and spring back when touched. Remove and cool for 5 min. on a rack. Frosting: In medium bowl beat cream cheese and remaining 4 tbsp. butter until creamy. Continue mixing on low and slowly add powdered sugar. Add remaining 1 tsp. vanilla and mix until just combined. Spread frosting on half the cookie and make a sandwich with other half.
