Ingredients
- YIELD 1 CUP
- 1 tablespoon butter
- 2 tablespoons chopped shallots
- 1 teaspoon chopped garlic
- 1/4 cup bottled clam juice
- 1/4 cup dry white wine
- 1 teaspoon yellow mustard seeds
- 1 cup whipping cream
- 2 1/2 tablespoons whole grain Dijon mustard
- 1 teaspoon honey
Preparation
Step 1
Melt butter in heavy medium saucepan over medium heat.
Add shallots and garlic; saute until tender, about 2 minutes.
Add clam juice, wine and mustard seeds. Boil until liquid is reduced by half, about 2 minutes.
Add cream. Boil until liquid is reduced to 1 cup, about 3 minutes.
Mix in Dijon mustard and honey. Season with salt and pepper.
(Can be prepared 1 day ahead. Cover and refrigerate. Before using, rewarm over low heat.)
