Quick puff pastry

Before mixing freeze flour and butter 20 minutes.

Ingredients

  • 1-1/2 cup AP flour
  • 3/4 cup cake flour
  • 1-1/4 cup butter, cut into cubes
  • 3/4 tsp salt
  • 1/3 cup ice water
  • 1 tblsp lemon juice

Preparation

Step 1

Place the flours and salt into food processor. Pulse to combine. Add half of the butter cubes and pulse till the size of peas. Now add the second half and pulse till the size of peas. Slowly add lemon juice and water. Pulse till just combined.
Now remove to a floured board and roll into a 12-18" rectangle, ( dough will be very crumbly at this point) fold in half and reroll to another 12-18" rectangle. Fold in half again and wrap in plastic and freeze for 20 minutes.
Remove from freezer and roll out into rectangle and fold into thirds. Repeat this step twice. Now refrigerate till ready to use.
