Cuban Roasted Pork Tenderloin

Ingredients
- Double as needed for size of pork:
- 1 pork tenderloin (1 1/4 lb.) or pork roast
- 2 cloves garlic, diced
- 1/4 tsp. Kosher salt
- 2 Tbsp. brown sugar
- 1 tbsp. light rum or other
- Minced zest of one orange
- 1/8 tsp. (pinch or two) ground cumin
- 1/2 - tsp. ground coriander
- 1/2 cup beef broth
- 1/4 cup red wine
- Veggies:
- 3 medium sweet potatoes or regular potatoes
- 2 medium red onions or regular onions, cut in half and cut in pieces
- Veggie rub:
- 2 tbsp. olive oil, divided
- 1 tbsp. light rum or other
- 3 tbsp. fresh orange juice
- 1/2 tsp. Kosher salt
- 1/2 tsp. black pepper
- 1/8 tsp. ground cumin

Preparation
Step 1
For the roast: dice garlic, add other ingredients and rub on pork.
For the veggies: 1 tbsp. oil and mix rub with veggies
To cook: heat 1 tbsp. oil in cast iron skillet over med. - high heat. Sear pork on one side until browned.Flip pork and add veggies around it. Transfer skillet to oven and cook at 250 for 4 hours.
