Ingredients

  • 8 oz. rice noodles
  • 1 T sesame oil
  • 1 t sesame oil
  • 2 eggs scrambled
  • 1 chicken breast diced
  • 1/2 cup shallots diced
  • Pad Sauce
  • 1/8 cup fish oil
  • 1/8 cup rice wine
  • 1/8 cup brown sugar
  • 1/8 cup soy sauce
  • 1/16 cup sriracha sauce
  • 1/4 cup lime juice
  • 1 can bean sprouts, drained
  • 1/2 cup peanuts
  • 1/4 cup chopped cilantro
  • 1/4 cup green onions

Preparation

Step 1

Cook rice noodles by immersing them in boiling water until soft. About 8 minutes.

Cook egg in sesame oil in the shape of a patty and remove from pan. Slice in strips. Cook shallots in sesame oil and add chicken. Cook until chicken is done.

Whisk up sauce ingredients and add to pan with noodles, bean sprouts, egg, peanuts, cilantro and green onions. Heat together briefly and serve.
