Ingredients
- nonstick oil spray
- 1 C flour
- 1 C yellow cornmeal
- 1 T sugar
- 2 t baking powder
- 1 t salt
- 1/2 t baking soda
- 1/2 t cayenne pepper
- 1/4 C chopped fresh chives
- 1 1/2 C plain yogurt
- 2 large eggs
- 3 T butter, melted

Step 1
Preheat oven to 425 degrees. Spray 10 standard or 30 mini-muffin cups with spray.
Whisk together all dry ingredients except chives. Then add chives and stir. In a separate bowl whisk together wet ingredients. Add to dry and stir just until blended.
Spoon 1/3 C batter (1 generous T for mini-muffins) in muffin cups.
Bake about 20 (14 for min) minutes until muffins are puffed and golden, and tester inserted into center comes out clean.
