Ingredients

  • nonstick oil spray

    C flour

  • 1

    C yellow cornmeal

  • 1

    T sugar

  • 2

    t baking powder

  • 1

    t salt

  • 1/2

    t baking soda

  • 1/2

    t cayenne pepper

  • 1/4

    C chopped fresh chives

  • 1 1/2

    C plain yogurt

  • 2

    large eggs

  • 3

    T butter, melted

Directions

Preheat oven to 425 degrees. Spray 10 standard or 30 mini-muffin cups with spray. Whisk together all dry ingredients except chives. Then add chives and stir. In a separate bowl whisk together wet ingredients. Add to dry and stir just until blended. Spoon 1/3 C batter (1 generous T for mini-muffins) in muffin cups. Bake about 20 (14 for min) minutes until muffins are puffed and golden, and tester inserted into center comes out clean.
