Ingredients
- 1 lb. white beans, rinsed
- 6 c. chicken broth
- 1 tsp. chicken bouillon
- 2 onions, chopped
- 1 Tb. oil
- 6-8 cloves garlic
- 7 oz. can green chilies
- 2 tsp. cumin
- 2 tsp. oregano
- 2 tsp. cayenne
- 3 c. chicken, cooked
- 1 c. sour cream
- 3 c. shredded Montery Jack cheese
Preparation
Step 1
Soak beans in water overnight
Simmer beans, broth and bouillon for 3 hours, or until soft
Saute onion in oil. to the onion add garlic, chilies, spices and chicken. Chicken should be cooled and chopped into bite-sized pieces. Simmer 30 minutes.
Add sour cream and cheese and stir until melted.
Add beans.
