Cooking Light Banana Bread - Rhonda

This recipe calls for ground flax seed and I substituted wheat germ because that is what I had - - we loved it without the glaze - - was a firm and tasty banana bread with fewer fat and calories than most recipes!

Ingredients

  • 1 1/2 cups mashed bananas (I used three)
  • 1/3 cup plain fat-free yogurt (always have in frig but have never baked with it!)
  • 5 TBSP melted butter
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups flour
  • 1/4 cup ground flaxseed or wheat germ
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice (recipe said 1/8 tsp and I put in 1/2 tsp!)
  • Cooking Spray
  • 1/3 cup powdered sugar
  • 1 1/2 tsps low-fat milk

Preparation

Step 1

Preheat oven to 350

Combine first 4 ingredients in large bowl and beat with mixer at medium speed. Add sugars; beat until combined

Combine flour and next 5 ingredients (through allspice). Add flour mixture to banana mixture; beat until just blended. Pour batter into 9 x 5 pans - bake at 350 for 55 minutes - cool in pan 10 minutes - remove from pan and cool completely.

If desired - combine powdered sugar and milk and drizzle over bread.
