Peaches and Cream Cheesecake

Ingredients

  • 3/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 pkg. Dry vanilla pudding mix--NOT instant
  • 1 egg
  • 1/2 c. milk
  • 3 Tbsp. butter--softened

Step 1

Beat all of the above for 2 minutes at med. speed. Pour into 10" pie plate.
Drain 23-oz can sliced peaches reserving juice and place over batter. In small bowl, beat 1 8-oz pkg. cream cheese, 1/2 c. sugar and 3 Tbsp reserved peach juice. Spoon over peaches to within 1" of batter. Mix 1 Tbsp sugar and 1/2 tsp. cinnamon, and sprinkle over the top.
Bake at 350 for 30-35 minutes
Chill and store in refrigerator.

Can use pineapple chunks in place of peaches--using reserved pineapple juice.
