French Onion Soup (crockpot)

Ingredients

  • 8 tsp olive oil, divided
  • 4 pounds yellow onions, cut vertically into 1/4 in slices
  • 1 pound sweet onion (Vidalia, cut vertically
  • 4 tsp chopped fresh thyme, divided
  • 1 Tb flour
  • 1/4 c brandy
  • 1/4 c dry white wine
  • 1/2 c chopped celery
  • 1/2 c chopped carrot
  • 1/2 ounce dried mushrooms
  • 1 bay leaf
  • 8 c unsalted beef stock
  • 1 tsp Worcestershire
  • 1 tsp liquid aminos
  • 1 1/4 tsp salt
  • 1/2 tsp pepper
  • 4 oz French bread, cut into slices
  • 6 oz shredded Gruyere cheese

Preparation

Step 1

Caramelize onions in crock pot. Place 2 Tb oil,onion, & thyme in crockpot, cover and cook on high 8 hours.....when golden remove to saucepan and stir in flour, stir in brandy & wine, cook 1 min. Place onion mix in large bowl. To pan add remaining 2 tsp oil, add celery, carrot & mushrooms, bay leaf, cook 5 min, stirring occasionally. Add stock, Worcestershire & bring to boil. Reduce heat to medium and simmer 15 min. Let stand 10 min off heat. Strain broth and discard solid. Return broth to pan, add onion mix and remainder. Simmer and cook 15 min. Broil bread until tops are golden. Ladle soup into broiler afe crocks. Top each with2 bread slices, toasted side down. Sprinkle with cheese, ad broil 1 min until tops are golden. Enjoy
