SAUTE PRESSED GARLIC AND CHOPPED ONION AND RICE IN SMALL AMOUNT OF OLIVE OIL, JUST UNTIL LIGHTLY BROWNED, ADD LIQUIDS, SPICES AND CILANTRO, BRING TO A BOIL, REDUCE HEAT TO LOW, COVER AND COOK UNTIL TENDER, ABOUT 25 MINUTES, OR FINISH IN HOT OVEN.
