Ingredients

  • 1 ¬1/2 cups (2- 6 oz. cans) tomato paste
  • 4 cups water
  • 2 cloves minced garlic
  • 2 tsp. salt
  • 4-5 tsp. chili powder
  • Dash Tabasco sauce
  • 12 corn tortillas
  • Cooking oil
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 2 cups shredded cheddar or Monterey jack cheese
  • 1/2 cup black olives, chopped

Step 1

Preheat oven to 350. In medium saucepan, combine tomato paste, water, garlic, salt, chili powder, and Tabasco sauce. Simmer 20 minutes. Over medium heat, soften tortillas in approx. ¼” hot oil, just until softened (a few seconds on each side). Drain on paper towels. In fry pan, brown ground beef and onion. Drain well. Remove from heat and add 1-1/2 cup shredded cheese, 1 cup of tomato mixture and olives. Pour remaining tomato mixture into bottom of greased 13 x 9 pan. Spoon about 2 heaping tablespoons of meat mixture onto center of each tortilla. Fold or roll tortilla around filling. Place seam side down in pan. Pour any remaining meat mixture over top of tortillas. Top with cheese. Bake uncovered 20-25 minutes or until hot and bubbly.
