Ingredients

  • 8-3 oz cod fillets
  • 3/4 tsp salt, divided
  • 1 tsp black pepper, divided
  • 1/4 c flour
  • 4 tsp olive oil, divided
  • 1/4 c dry white wine
  • 3 T fresh lemon juice
  • 1 T capers, drained
  • 3 T butter
  • 2 T minced fresh parsley

Step 1

Rinse fillets and pat dry. Season with 1/2 tsp salt and 1/2 tsp pepper. Dredge in flour.
Heat 2 tsp olive oil in non-stick skillet over medium-high heat. Add half the fillets and cook until golden about 2 minutes per side. Transfer fillets to a plate and tent with foil. Repeat with remaining fillets. Remove these from pan.
Add wine, lemon juice and capers to the empty skillet. Cook for 30 seconds. Off the heat, swirl in the butter until it melts. Add 1/4 tsp salt and 1/2 tsp pepper to sauce and the parsley. Spoon sauce over fish.
