Ingredients

  • 2 tbl butter
  • 8 oz pkg sliced Portobello mushrooms
  • 1/4 cup dry sherry
  • 2 tbl flour
  • 2 cups vegetable broth
  • 1/2 cup whipping cream
  • 2 tsp chopped fresh thyme
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper

Preparation

Step 1

melt butter in a lg skillet over med-high heat. add mushrooms; saute 5-6 min or until tender. stir in sherry, and cook 1 min or until liquid almost evaporates. stir in flour, and cook, stirring constantly, 1 min. gradually stir in broth. bring to a boil; reduce heat, and simmer, stirring constantly, 5 min or until slightly thickened.
stir in cream. simmer 8 min, stirring constantly, or until thickened. remove from heat, and stir in thyme, salt and pepper.
