Ingredients
- 2 eggs
- 3/4 cup vegetable oil
- 1/4 cup milk
- 2 teas. Vanilla
- 2 cups flour
- 1 cup brown sugar
- 2 teas. Baking soda
- 2 teas. Cinnamon
- 1/2 teas. Salt
- 1-1/2 cup shredded carrots
- 1 cup shredded apple
- 1/2 cup coconut
- 1/2 cup raisins
- 3/4 cup chopped nuts

Step 1
Mix eggs, oil, milk and vanilla with wire whisk. Add brown sugar. Mix. Add dry ingredients and stir. Add in remaining ingredients. Mix well
Fill muffin cups ¾ full. Bake at 350 for 20-25 minutes.
