Meatloaf with Tomato Gravy

Ingredients

  • Meatloaf:
  • 5 pounds ground meat: equal amounts of beef and pork
  • 15 ounces of Italian bread crumbs
  • 10 eggs
  • 1 chicken bouillon cube, dissolved in 1/2 cup of hot water
  • 1/2 cup finely grated Parmesan cheese
  • chopped parsley
  • salt and pepper
  • Tomato Gravy:
  • 2 tablespoons butter
  • 4 cloves smashed garlic cloves
  • 2 tablespoons flour
  • 2 14 ounce cans of chicken stock
  • 2 tablespoons tomato paste
  • 1/4 cup red wine vinegar
  • 1 - 14 ounce can whole tomatoes
  • salt and pepper
  • 1 tablespoon dried oregano

Preparation

Step 1

To prepare meatloaf:
1. Preheat oven to 350 degrees.
2. In a large bowl, mix meat, breadcrumbs, eggs, bouillon broth, Parmesan cheese, and chopped parsley until well combined.
3. Form into a loaf shape and place on a cookie sheet coated with nonstick spray.
4. Place in oven for 45 minutes until until an internal temperature of 160 degrees.

To prepare tomato gravy:
1. In a large saucepan, heat butter. As butter begins to foam and brown, add smashed garlic and allow garlic to brown slightly.
2. Sprinkle in flour, stirring constantly, forming a roux. Cook about 10 minutes until brown. If you do not cook long enough, your gravy will have a flour taste.
3. Add chicken stock and tomato paste and cook for 3 to 5 minutes.
