Yams Rosemary-Roasted

  • 4 pounds Yams (red sweet potatoes), peeled cut into 1 inch squares (1 Lb)
  • 2 Tablespoons (1/4 stick) butter, melted (1 1/2 tsp)
  • 2 Tablespoons Canola oil (1 1/2 tsp)
  • 1 Tablespoon finely chopped fresh (3/4 tsp) rosemary or 1 teaspoon dried
  • 1/4 cup brown sugar (1 Tbsp)
  • Salt & pepper to taste

Preparation

Step 1

1. Place yams in large bowl. Toss with butter, oil, and rosemary and brown sugar place potatoes in a 10 inch baking pan.

2. Place on the 2 inch rack and cook on power level high for 10 minutes.

3. Switch potatoes to 4 inch rack and cook an additional 5 minutes.

4. Salt and pepper to taste.

Tips
The 2 inch rack and 10 inch baking pan comes with the extender ring kit.
If you do not have the 2 inch rack, start with the potatoes on the 1 inch rack.
You can use any oven safe dish in the NuWave Oven.
