Sweet & Sour Beef (Stew)

Ingredients

  • 2 Tbsp Olive Oil
  • 1 Tbsp Minced Fresh Ginger Root
  • 1 Clove Garlic, Smashed
  • 1 Red Bell Pepper
  • 1 large Carrot, sliced
  • 1 cup Sliced Mushrooms
  • 1 cup Sliced Green Beans
  • 1 Lb Lean Beef Stew Meat (season with 1/2 tsp onion powder, salt and pepper, and 1/4 tsp chili powder)
  • 2-3 Tbsp Flour
  • 1 Cup Beef Broth
  • 1 Tbsp Tomato Paste
  • 1 Tbsp Soy Sauce
  • 3 Tbsp Orange Marmalade
  • 1/2 cup Crushed Canned Pineapple
  • Salt And Pepper

Step 1

Heat 1 tablespoon oil in medium nonstick skillet. Add ginger root, garlic, sliced carrot, green beans and bell pepper and saute over medium heat 5 minutes. Continue cooking on low until carrots are just beginning to soften.

In a different skilled, dust beef cubes with 1 tbsp flour, onion powder, salt, pepper and chili powder. Brown over high heat with a bit of olive oil, turning to brown evenly. Pour in beef broth and stir up any browned bit in the skillet. Add tomato paste, soy sauce, orange marmalade. Stir mixture well. Cover skillet and simmer on low for an hour. Stir in pineapple then add in cooked veggies. Season to taste with salt and pepper. Cover and simmer another 5 minutes. Serve over hot cooked rice.
