Spaghetti with Bacon & Mushrooms

  • 2 T EVOO
  • 3 slices thin bacon, cut in 1/2" pieces
  • 3 cloves minced garlic
  • 10 oz package mushrooms, thinly sliced
  • 1 cup chicken broth or dry white wine
  • 1 cup half and half
  • 1/4 cup heavy whipping cream
  • 3 green onions sliced
  • 1/4 cup flat leaf parsley minced
  • 1/2 cup grated cheese
  • S&P to taste
  • 1 lbs spaghetti



Step 1

Heat oil and cook bacon till lightly browned, not crisp, remove bacon and add mushrooms and garlic to pan, cook till mushrooms brown. Pour broth and cook till reduced by half. Reduce heat add cream(s) and stir allowing it to bubble and thicken. Add onions and parsley, cook for 1 more min. then add cheese and stir well to melt and incorporate into sauce. Turn off heat. Drain and reserve pasta water (1/2 cup) if needed and toss all together, let set 5 mins
