Orange Roughy - Pesto Crusted

Ingredients

  • 1/4 cup of pesto sauce (ready made)
  • 1/2 cup fine, dry breadcrumbs
  • 1/4 teaspoon pepper
  • 4 (4-5 ounce each) grouper (orange roughy)fillets
  • Non-stick cooking spray

Preparation

Step 1

1.Combine pesto, breadcrumbs, and pepper in a shallow dish. Dredge fillets in breadcrumb mixture, and place on 4 inch rack, that has been sprayed with non-stick oil.

2.Coat the fillets with non-stick cooking spray.

3.Cook on power level high for 4-5 minutes per side.

Tips
If cooking from frozen cook on power level high for 6-7 minutes.
Cooking times vary according to thickness of fish.
