Spicy Shrimp Casserole

  • 6 (3)
  • 2 Lbs peeled medium size shrimp (1 Lb)
  • 3 cups of cooked long-grain rice (1 1/2 Cups)
  • 1 cup (4 ounces) of sharp cheddar cheese (1/2 Cup)
  • 1 (10 3/4 ounce) cream of mushroom soup, undiluted (1/2 Can)
  • 1 Tablespoon butter (1 1/2 tsp)
  • 1/2 cup of green onions (1/4 Cup)
  • 2 teaspoons of Worcestershire sauce (1 tsp)
  • 1/2 teaspoon of dry mustard (1/4 tsp)
  • 1/2 teaspoon freshly ground pepper (1/4 tsp)
  • 1/4 cup milk (2 Tbsp)
  • 1 teaspoon Cajun seasoning (1/2 tsp)
  • Garnishes: Green onions, peeled cooked shrimp

Preparation

Step 1

1. Clean shrimp and devein if needed.

2. Combine rice, shrimp, cheese, and soup in bowl.

3. Melt butter in a large skillet over medium to high heat, and add green onions; cook, stirring constantly, until tender.

4. Stir in green onions, Worcestershire sauce, and next four ingredients.

5. Place all mixture in a greased 10 inch round pan or 8x8 square.

6. Place on 1 inch rack and bake for 25-28 minutes.
