Ingredients
- 1 lb. boneless chicken breasts, cut into pieces
- 1 onion, diced
- 1 tsp. oregano
- 1 tsp. dried basil
- 1 tsp. parsley
- Salt and pepper to taste
- 1 tsp. crushed red pepper flakes
- 1 T. olive oil
- 2 cloves garlic, minced
- 2 C. penne pasta, cooked and drained
- 1 (14 oz.) can diced tomatoes
- 3 T. tomato paste
- 3/4 C. chicken broth
- 1/2 C. mozzarella cheese, shredded
Preparation
Step 1
In a large saucepan, heat oil and cook chicken, onion, and garlic until chicken is no longer pink. Using a blender, combine tomatoes (with juice) and tomato paste; pour into saucepan with chicken. Pour in broth, oregano, basil, parsley, salt, pepper, and red pepper flakes; bring to a boil, reduce heat, and simmer for 15 minutes as sauce thickens. Add pasta to a greased baking dish and top with chicken and sauce mixture. Sprinkle cheese on top and bake for 30 minutes.
