Asparagus Rolls

Ingredients

  • 1 can asparagus spears (Green Giant or well-known brand)
  • 1 loaf sandwich bread
  • 1 (8-ounce) package cream cheese
  • Parmesan cheese
  • melted margarine or butter (any brand)
  • Paprika

Preparation

Step 1

Remove asparagus from can, count number of spears, and set aside.
Remove same number of bread slices to match number of asparagus spears. Cut crusts away from each slice of bread.
Roll bread flat with rolling pin.
In small bowl, beat together cream cheese and a small amount of parmesan cheese. (NOTE: in place of parmesan you can use 2-3 ounces of fresh crumbled blue cheese if preferred).
Spread cream cheese mixture on a slice of bread and lay an asparagus spear on it and roll up.
Dip in melted margarine.
Place seam down on cookie sheet and sprinkle with paprika Quick freeze the tray(s).
When thoroughly frozen, transfer rolls to freezer zip lock bag for use later.
When ready to use, cut each rolled bread slice into thirds, place on cookie sheet(s) and heat until done (when bread is puffed and a little brown).
Use preheated oven of 400 degrees. Could take from 10-15 minutes in a regular oven. Serve warm.
