Ingredients
- 8 eggs
- 1/4 pound sliced corned beef, chopped
- 2/3 cup grated Swiss cheese
- 1/2 cup drained sauerkraut
- 1 tablespoon mustard
- 4 tablespoons butter, melted
- 4 slices rye toast
- 1 tablespoon chopped fresh dill
Preparation
Step 1
In bowl, whisk eggs. Stir in next 4 ingredients; season. In skillet, cook egg mixture in butter over high, stirring occasionally, until set, 2 to 3 minutes. Divide among toasts; top with dill.
