Mocha Oatmeal Cake

Ingredients
- Cake:
- 2 Tbsp. instant coffee powder
- 1 1/3 cups boiling water
- 1 cup uncooked oats
- 1/2 cup butter or margarine, softened
- 1 cup white sugar
- 1 cup firmly packed brown sugar
- 1 tsp. vanilla
- 2 eggs
- 1 1/2 cups sifted all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 Tbsp. cocoa
- Mocha Icing:
- 3 Tbsp. butter or margarine, softened
- 2 cups powdered sugar, sifted
- Dash salt
- 1 tsp. vanilla
- 2 Tbsp. prepared coffee

Preparation
Step 1
1. Combine instant coffee powder and boiling water. Reserve 2 Tbsp. coffee for the icing. Pour remaining coffee over the oats and stir to combine. Cover and let stand for 20 minutes.
2. Beat butter until creamy. Gradually add sugars, beating until fluffy. Blend in vanilla and eggs. Add oat mixture and blend well.
3. Sift together flour, baking soda, salt, and cocoa and mix well. Pour batter into greased and floured 9-inch baking pan.
4. Bake at 350 degrees for 50-55 minutes.
5. To prepare icing beat butter until creamy. Add sugar, salt, vanilla, and coffee. Beat until smooth and spreadable. Frost the cooled cake. If desired, decorate with chocolate curls.
