Casseroles - Chicken Pot Pie

Ingredients

  • Double Crust Pastry
  • 1/2 cup chopped onion
  • 6 Tbls. butter
  • 1/2 cup flour
  • 3 cups chicken broth
  • 3 cups cubed cooked chicken
  • 10 oz. package frozen peas & carrots, cooked and drained
  • 1/4 cup chopped pimento (optional)

Preparation

Step 1

Cook onion in butter until tender, but not brown. Blend in flour and 1 teas. Salt. Add broth all at once. Cook until thick and bubbly. Add remaining ingredients.

Pour into pie shell, top with additional pastry.

Bake at 400 for 40 minutes or until done.
