Puffed-Brown Chicken

Ingredients

  • 4 bone-in, skin-on chicken breasts
  • Salt, pepper
  • Lemon juice

Preparation

Step 1

Sprinkle chicken breasts with salt and pepper. Brush with lemon juice.

Place rib side up in a shallow pie pan or broiler pan. Broil quickly about 5 minutes or until brown. Turn chicken pieces skin side up. Cover bottom of pan with 3/4 inch boiling water and place in a 480 degree oven for 20-25 minutes or until skin is brown and crisp. (15 mins. for small breasts).
