Ingredients

  • 2 eggs
  • 2 cups shredded zucchini
  • 1 cup brown sugar
  • 2/3 cup oil
  • 1 tsp. vanilla extract
  • 1 cup chopped walnuts, optional
  • 8-oz. pkg. cream cheese, softened
  • 1 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. salt

Preparation

Step 1

1. Mix eggs, zucchini, sugar, oil, vanilla, and nuts. Mix in cream cheese until smooth.

2. Separately, mix flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. Combine wet and dry ingredients, mixing gently until just combined.

4. Make sure you have a loaf pan that fits in your oval 6-quart cooker. Set it on a jar lid or other heat-proof object so the pan is not sitting on the floor of the insert.

5. Grease and flour loaf pan. Pour batter into prepared pan and place in cooker.

6. Prop lid open at one end with a chopstick or wooden spoon handle. Cook on High for 3-4 hours, until tester inserted in middle comes out clean.

7. Wearing oven mitts to protect your knuckles, remove hot pan and allow to sit for 10 minutes. Run knife around edges and turn loaf out to cool for 30 more minutes before slicing.
