Potato Salad

Ingredients

  • 1 24 oz pkg small red potatoes, halved
  • 1 24 oz pkg baby Dutch yellow potatoes, halve
  • 1 24 oz pkg petite purpel potatoes, halved
  • 1 cup mayonnaise
  • 1 medium red onion, chopped fine
  • 3 Tbsp chopped fresh parsley
  • 2 Tbsp white wine vinegar
  • 1 1/2 tsp salt
  • Garnish- fresh parsely sprigs

Preparation

Step 1

In a large heavy-bottomed pot, place red and yellow potatoes, cover with water. Bring to a boil. Reduce heat to medium and simmer for 14-17 minutes. Drain; cool slightly. Place potatoes in a large bowl.
In a medium saucepan, place pur;e potatoes; cover with water. Bring to a boil. Reduce heat to medium simmer for 10-12 minutes. Drain; cool slightly. Add to red mixture in bowl. Stir in mayonnaise, red onion, vinegar and salt until combined. Garnish with parsely sprigs if desired.
