Ingredients

  • 2 tablespoons oil
  • 3 eggs
  • 1/2 cup honey
  • 1/8 cup vanilla
  • 1 cup grated zucchini (or 2 ripe banana's mashed)
  • 3.5 cups almond meal/flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Step 1

Combine all wet ingredients & mix well. Combine all dry ingredients & mix well - getting all lumps out of the almond flour. Combine wet & dry ingredients until smooth. Put into a greased & floured loaf pan (can use a gluten free all purpose flour & vegetable or cocoanut oil shortening). Bake at 300 degrees for 1 hour and 10-15 minutes - until toothpick comes out clean.
